# Expert Tips:

01 -
  • The flaxseed creates this incredible creamy texture while secretly loading you with omega3s and fiber, so you're essentially eating health food that tastes like a chocolate truffle
  • It takes ten minutes of actual effort and then the fridge does all the work, making it perfect for those nights when you want dessert but cannot summon the energy to bake
02 -
  • The first time I made this, I skipped the chilling step thinking I could eat it warm, and let me tell you, it was just chocolate milk with weird texture issues, the fridge time is absolutely nonnegotiable
  • Using a blender instead of whisking by hand creates this impossibly smooth texture that almost feels like it came from a restaurant kitchen, though I rarely bother unless I'm serving company
03 -
  • If your almond milk is particularly thick or your flaxseed is coarse, add an extra tablespoon of ground flaxseed to ensure it sets up properly
  • Taste your mixture before chilling it, because once it is cold, flavors dull slightly and you want it to be perfectly balanced from the start
