Miso Honey Chicken Wings (Print Version)

Sweet and savory chicken wings glazed with miso and honey, baked golden and tender for sharing.

# What You Need:

→ Chicken

01 - 2.2 lbs chicken wings

→ Marinade

02 - 3 tbsp white miso paste
03 - 2½ tbsp honey
04 - 2 tbsp soy sauce
05 - 1 tbsp rice vinegar
06 - 1 tbsp sesame oil
07 - 2 garlic cloves, minced
08 - 1 tsp fresh ginger, grated
09 - ½ tsp freshly ground black pepper

→ Garnish

10 - 2 tbsp toasted sesame seeds
11 - 2 green onions, thinly sliced

# How To Make:

01 - In a large mixing bowl, whisk together the white miso paste, honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper until smooth and well combined.
02 - Add the chicken wings to the bowl and toss thoroughly to ensure even coating. Cover and refrigerate for at least 2 hours, or ideally overnight for maximum flavor penetration.
03 - Preheat the oven to 400°F. Line a baking sheet with parchment paper or aluminum foil to prevent sticking.
04 - Remove the wings from the marinade and arrange them in a single layer on the prepared baking sheet. Set aside any remaining marinade for basting.
05 - Bake for 35 to 40 minutes, turning the wings halfway through and brushing with the reserved marinade, until the skin is golden and the internal temperature reaches 165°F.
06 - Transfer the wings to a serving platter and garnish with toasted sesame seeds and thinly sliced green onions. Serve immediately while hot.

# Expert Tips:

01 -
  • The miso does all the heavy lifting for umami depth so you barely need any other seasonings to make people think you spent hours cooking.
  • These wings bake instead of fry which means you get that sticky golden finish without standing over a pot of splattering oil.
  • Everything mixes in one bowl and then the oven takes over so cleanup is almost embarrassingly easy.
02 -
  • The first time I made these I skipped the overnight marinade and the wings were good but not great because miso needs time to penetrate the skin and meat to truly transform the flavor.
  • If your honey has crystallized in the jar warm it gently in the microwave for ten seconds before whisking because cold crystallized honey will fight you and leave lumps in the marinade.
03 -
  • Resist the urge to crowd the baking sheet because wings that touch each other steam instead of roast and you lose that irresistible chewy edge everyone fights over.
  • Save a spoonful of the raw marinade before adding the chicken and drizzle it over steamed rice for a quick side dish that ties the whole meal together.
