01 - In a small saucepan over medium heat, whisk together almond milk, heavy cream, cocoa powder, and chopped chocolate until well combined.
02 - Stir continuously until the chocolate is completely melted and mixture is smooth and steaming, about 3-4 minutes. Do not allow to boil.
03 - Add erythritol, vanilla extract, and sea salt. Whisk vigorously until sweetener is fully dissolved and hot chocolate reaches creamy consistency.
04 - Taste and adjust sweetness level if desired. Pour into pre-warmed mugs and top with sugar-free whipped cream and shaved chocolate. Serve immediately while hot.
